Dominican Chenchen🌽







What is the Dominican chenchen?

  The Dominican chenchén is a ground corn base dish. It can be described as having a texture similar to that of a rice pilaf or a risotto, depending on the taste of the cook.

Ingredients

1 pondo coarse ground corn or “hulled”. (or corn for chenchén)

1 can coconut milk

1 liter whole milk

1 can evaporated milk

1 tablespoon garlic paste

1 teaspoon black pepper

3 tablespoons butter

1 teaspoon anise

Salt

We are going to wash our cracked corn with plenty of water and we are going to let it rest a day before for this recipe.

As a second step, we are going to remove the hard shell from the coconut and place it in the blender with the whole milk, we are going to extract what will be our coconut milk, strain it into a container and proceed to extract the second coconut milk, moistening the pulp and returning to squeezing this will be used to soften the corn.
In a large pot we are going to pour our second coconut milk with a touch of salt, green chili, coriander and corn to soften it for 30 minutes over medium heat when it runs out of liquid add more coconut milk little by little.

After the time has elapsed, we let it rest and we are going to prepare the sauce with the onion, the green chili pepper and the crushed garlic. We cook for a few minutes and then add the first coconut milk with the 2 evaporated milk and mix and then add the chenchén that we have resting with. a touch of lemon and let it simmer over low heat for 15 minutes
